Khoi is a puffed rice made from unhusked rice grains that are fried in hot sand. The starch and moisture in the rice react to create a crisp texture. The individual husks need to be removed manually after the rice is popped. Khoi is also known as popped rice, lahi, and kheel rice. Kanakchur khoi is a premium variety of khoi from the Kanakchur region of West Bengal, India. It is known for its flavor and aroma.
